Stuffed Chicken Breasts

Ingredients
4 boneless, skinless chicken breasts, flattened4 fresh basil leaves1 tbsp olive oil1/2 cup of chopped sun-dried tomatoes4 oz shredded Mozzarella cheese1/3 tsp rosemary1/3 tsp oreganoSalt and pepper to taste
Directions
Spread olive oil on one side of each chicken breast. Place 1 basil leaf on the oil-coated side of each breast.

Combine remaining ingredients in a small bowl. Spoon equal amounts of tomato/cheese filling on top of the basil leaf side of each breast. Secure with toothpick if necessary.

Place each stuffed breast in a casserole dish seam side down. Spray with cooking spray and bake until golden brown and meat is no longer pink.
