Fish Paprikash

Atlantic Pollock (fish), 2 filletGreen Peppers (bell peppers), 1 cup, strips Onions, raw, 2 medium (2-1/2" dia) Canned Tomatoes, 1 canOlive Oil, 3 tbspYogurt, plain, low fat, .25 cup (8 fl oz)2/3 cup of flour1/4 tsp of paprika2 tbsp of paprika
Cut fish into 2 inch strips, coat with flour and 1/4 teaspoon of paprka, salt and pepper to taste. Fry in 1 tbsp. of the oil until browned lightly on all sides.
Wipe pan and heat remaining 2 tbsp of oil. Saute onion until just tender, add green pepper. Stir until green pepper is tender. Add the drained can of tomatoes and bring to a simmer.
Stir in the 2 tbsp of paprika, return the fish to the pan and add the yogurt. Heat through.
