Herb and cheese omelette

Ingredients

2 eggs2 tbsp waterMrs. Dash Italian seasoning (or your favourite blend of herbs)1 tsp butter, or cooking spray such as PAM1/2 cup mozarella cheese, grated
Beat eggs and water together.
Combine egg mixture with Mrs. Dash (nutritional info is for 1 tbsp, but add according to preference).
Spray skillet with PAM cooking spray, or coat the cooking surface with the melted butter. Pan should be heated to medium-high heat (best results are obtained if you do not add the egg mixture until the pan has been heated).
Pour egg mixture in pan. As the edges set, push cooked parts to the center of the pan; turn/rotate pan to allow uncooked portions to fill the gaps.
When surface is almost set (but still moist), sprinkle with cheese and fold in half, removing omelette to plate.
Makes 1 omelette.
You can add green peppers, onions, asparagus, ham, etc., of course, if you feel like doing more work ;).
