Chicken pilaf

Ingredients
2 cups cooked roast chicken, diced1 cup rice1 cup onion, diced2 cups chickpeas (canned)1/2 cup frozen peas1 cup chicken stock1 cup water1 tsp coriander1 tsp chili powder1 tsp tumeric1 tbsp canola oil
Directions
Heat oil in pan and saute the onion until golden. Add the chicken and rice and cook for a further 2 minutes. Add the spices and contine to cook, stirring constantly for 1 minute. Add the peas, stock and water and turn the pan down to low, cooking for 15-20 minutes or until all liquid has been absorbed. Take off the heat and set to one side for 3 minutes.

Serve with cucumber salad and pita bread.

Serves 4

you can substitute the chicken and chickpeas with other leftover cooked meat or beans eg. lentils.
