frozen strawberry mousse

Ingredients
1 Qt strawberries, washed and hulled1 1/2 cups sugar2 T lemon juice2 egg whites
Directions
Pulse the strawberries in the food processor to make a chunky puree. Add sugar and lemon juice. Beat egg whites untill very stiff, fold into strawberry mixture. Cover the bowl, and place in freezer untill almost frozen. Remove from freezer and beat untill very smooth. Return till freezer untill serving time.

    I used Splenda instead which when placed back into the freezer it made it so hard you couldn't touch it with an axe. Next time I would partially freeze, whip then in the fridge. What amazing flavor! And good use for the strawberries. Will make again next wk. Thanks - 10/24/08
