4 cups sliced zuchinni1 cup sliced onion1 and 1/2 cups chunked tomatoes1 tablespoon corn meal5 soda crackers2 teaspoons soft margarine1/4 cup grated cheddar cheese1 tablespoon olive oilpinch each of garlic powder, basil and rosemary, salt and pepper
Sautee zuchinni and onion in olive oil until just starting to cook, add tomatoes and stir.
Sprinkle with spices and let cook until vegies are tender. Sprinkle lightly with corn meal and stir after this starts melt into vegies. Allow to thicken some and then take off burner. Crush crackers to a very fine meal in platic bag and then add margarine and work into the cracker meal until it is coarse looking, add cheese and shake bag til all mixed together. Shake this mixture all across top of vegies and place under broiler in oven until a nice crispy, crusty golden brown.
