oriental chicken stir fry

Ingredients
1 tbls veg oil3/4 lb or 12 oz chicken2 c broccoli florets2/3 c. chopped red pepper3 green onions -minced1 or 2 cloves garlic2 c. mushrooms1 c. chopped celery1/2 c. chicken broth1 tbsp cornstarch2 tsp soy sauce ( low sodium)1/2 tsp ground ginger or equivalent ginger root
Directions
In wok heat oil - add chicken - cook for 3 min and stir constantly

add broccoli,, red pepper,onions and garlic-cover and simmer for 5 min.

add mushrooms and celery cover and stem for 2 min.

combine chicken broth, cornstarch, soy sauce and ginger- pour over chicken mixtur. Stir-fry for 1 min. or until sauce thickens.
