Turkey enchiladas

1.5 lb. ground turkey or beef2 cups shredded monterey jack cheese3/4 cup sliced green onions3/4 cup lite sour cream2T parsley1.5 tsp salt1/4 tsp pepper24 oz tomato sauce1/2 cup chopped green bell peppers3T chopped green chilies1 T chili powder1/4 tsp cuminnon fat tortillas
cook beef or turkey. Drain. Stir in 1 1/2 cup of the cheese,
green onion, sour cream, parsley, salt & pepper. Cover and reserve. Heat remaining ingredients to boiling, simmer uncovered for 5 minutes. Spoon about 1/4 cup of turkey or beef mixture into
each tortilla
rollup, arrange in ungreased baking dish. Pour
sauce over enchiladas and sprinkle with remaining cheese. Bake uncovered 350 Degrees for 20 minutes
