Morning Glory Muffin

1.5 cup flour3/4 cup ground flax seed3/4 cup oat bran1.5 cup brown sugar2 tsp baking soda1 tsp baking powder1 tsp salt1 tbsp cinnamon3/4 cup milk2 beaten eggs1 tsp vanilla1/2 cup oil2 cups shredded carrots2 cups shredded apples1/2 cup raisins1 cup pecans
Bake at 350 degrees for 15 - 20 minutes or till toothpick comes out clean.
1. Mix all dry ingredients in one large bowl.
2. In another bowl mix, milk, eggs, vanilla and oil.
3. Add to dry ingredients and mix till moist.
4. Fold in carrots, apples, raisins or nuts.
5. Filled prepared muffin cups 2/3 full or more with batter.
6. Makes 12 large muffins.
