1 cup red tomatoes, seeds removed & diced1 cup English cucumber peeled & diced1/2 cup red onions, dicedJuice of 1 lemon2 tbsp Extra Virgin Olive Oil1 tsp dried dill1/2 tsp dried mint1/2 tsp SumacS & P to taste
Finely dice tomatoes, cucumber and onion into small cubes. If you only have a regular cucumber, remove the seeds. Remove seeds from tomatoes before dicing to avoid a watery salad.
Add all other ingredients and toss to coat the veggies. Serve with extra lemon wedges.
