Chocolate Tapioca Pudding

Ingredients
1/3 c. sugar3 Tbsp. Minute tapioca1/3 c. baking cocoa1/8 tsp. salt2 3/4 c. 1% milk1 egg, well-beaten
Directions
Combine sugar, tapioca, cocoa, and salt in saucepan. Add egg and about 1/2 c. milk. Stir until there are no lumps. Add remainder of milk.
Cook over medium heat, stirring regularly, until mixture comes to a boil. Boil one minute, stirring to keep it from sticking. Remove from heat and allow it to cool. Serve cool with fat-free Cool Whip.

Makes about 6 (1/2 cup) servings.
