2tsp Olive Oil2 leeks, whites only, washed well and chopped1 clove garlic, minced1 small potato, peeled and chopped8 ounces of frozen artichoke hearts, thawed2 cups chicken broth or stock2 TBSP Mascarpone Cheese, plus more for garnishChives for garnish
Heat oil in a large,heavy pot. Add leeks and garlic and stir. Add potatoes and cook for 5 minutes. Add artichokes, broth, salt and pepper and cook for about 20 minutes or until vegetables are tender. Blend the soup in batches until smooth. Add 2 TBSP of Mascarpone and stir until mixed. Serve garnished with mascarpone and chives if desired. Makes 4 servings (Giada De Laurentis)
