Curried Mango Pork Chops

Ingredients
4 (4-ounce) boneless pork chops, 3/4-inch thick2 teaspoons curry powder1/4 teaspoon seasoned salt2 teaspoons vegetable oil4 sliced green onions1/4 cup raisins1/3 cup chicken broth1 teaspoon cornstarch1 fresh mango, peeled and diced2 tablespoons flaked coconut
Directions
Season chops with curry powder and seasoned salt. Heat oil in large skillet over medium-high heat. Brown chops on both sides, turning once, for a total of 7-8 minutes. Remove chops from pan, reserve. In small bowl stir cornstarch well into chicken broth. Add onions, raisins, and chicken broth mixture into skillet; cook and stir until slightly thickened. Return chops to pan; heat through. Serve chops garnished with mango and coconut.

Makes 4 servings (3 oz cooked pork per serving.)

    Fantastic! I added 1 tsp each of minced garlic and ginger with the broth and raisins, and also added the mango and coconut in with the sauce and chops and heated through. Wow! Wonderful over basmati rice with some plain yogurt or sour cream on the side. - 11/14/07

    They had so much flavor(added a bit more curry than called for) Also it was so easy and quick to make. Hubby loved them so did I . Will definitely make them again. I will add more broth and cornstarch though. - 9/12/08

    It was so very good! I subbed turkey breast chops for pork chops b/c I had gastric bypass and pork does not do well. It was fantabulous! I would add more green onions next time because I love them, and it might need a bit more oil if you don't have a non-stick pan. My chops started to stick. Yum!!! - 3/8/08

    We really liked this tonight. I agree will increase chicken broth next time for more sauce. Is also good with dried apricots, if you don't have mango on hand.

    I really liked this recipe. I actually coated the chops with the curry well before dinner time and let them "marinate". I left off the coconut, but the rest was great.     Very good recipe. I did as others did and doubled the chicken broth. I did not double the cornstarch, since we don't like our sauce too thick. I also added some crushed red pepper flakes for a little more kick and I added some cilantro. This is deffinately a keeper. - 6/29/09
