Curried Mango Pork Chops

4 (4-ounce) boneless pork chops, 3/4-inch thick2 teaspoons curry powder1/4 teaspoon seasoned salt2 teaspoons vegetable oil4 sliced green onions1/4 cup raisins1/3 cup chicken broth1 teaspoon cornstarch1 fresh mango, peeled and diced2 tablespoons flaked coconut
Season chops with curry powder and seasoned salt. Heat oil in large skillet over medium-high heat. Brown chops on both sides, turning once, for a total of 7-8 minutes. Remove chops from pan, reserve. In small bowl stir cornstarch well into chicken broth. Add onions, raisins, and chicken broth mixture into skillet; cook and stir until slightly thickened. Return chops to pan; heat through. Serve chops garnished with mango and coconut.
Makes 4 servings (3 oz cooked pork per serving.)

It was so very good! I subbed turkey breast chops for pork chops b/c I had gastric bypass and pork does not do well. It was fantabulous! I would add more green onions next time because I love them, and it might need a bit more oil if you don't have a non-stick pan. My chops started to stick. Yum!!! - 3/8/08

I really liked this recipe. I actually coated the chops with the curry well before dinner time and let them "marinate". I left off the coconut, but the rest was great. My husband, however thought this recipe was just okay so I am not sure if it is going to see many repeat performances. - 3/16/09
