Mexican Rice Casserole

Ingredients
1 lb lean ground turkey1 cup chopped onion1 cup chopped green pepper1 can diced Tomatos1 cup beef consomme1 sm can chopped black olives1 can sweet corn with liquid1 cup long grain rice1 cup shredded low fat cheddar cheese1 tbsp chili powder ( or to taste)!/2 tsp saltGarlic to taste1 tsp Cumin
Directions
In large skillet brown ground turkey. When browned add chopped onion and green pepper, saute till onion is translucent. Add chili powder, salt, cumin and garlic. Add tomatoes, consomme olives and corn, bring mixture to a boil, add rice, bring back to a boil.
Pour mixture into 3 qt covered casserole, Bake covered at 350 for 35 minutes, remove cover, top with cheese and cook for 10 additional minutes.
