Spicy Cieken

Ingredients
2 boneless skinless chicken breasts, quartered2 vine ripe tomatoes, diced2 tbsps dijon mustard1 tbsp cumin1 tbsp chili powder1/2 tbsp paprika1 tbsp lime juice2 tbsps light olive oilCopyright CieKat's Cookbook in production
Directions
make marinade out of all ingredients but tomatoes and chicken.
Will be thick.
Quarter chicken, and slather marinade onto quarters.
Cook on each side 4-6 minutes on medium heat.
Add tomatoes after flipping first side, so they get heated but not too soft.
Serve with wild rice, or quinoa, and 1 tbsp of freshly grated parmesan cheese.
