BBQ Baby Jackfruit

4 cloves garlic, minced1 tsp grated ginger root1/4 cup water20 oz green jackfruit (in brine or water), drained and rinsed well, squeezed of extra waterpinch ground chipotle pepper1/4 tsp liquid smoke (optional)1/2 tsp fine salt1/2 cup low-sugar BBQ sauce1/4 cup water
Heat a non-stick pan over medium-high heat.
Add garlic, ginger and water and sauté for 1-2 minutes, until liquid evaporates.
Add the jackfruit, chipotle, liquid smoke and salt.
Cook, stirring, for 4-5 minutes longer.
Transfer the pan mixture to a slow cooker, add the BBQ sauce and water, and toss well.
Cook on HI for 1 hour, stirring every 15-20 minutes and adding more water as needed.
The jackfruit should be fork tender.
Take the jackfruit out of the cooker and shred.
Transfer to a covered container and allow to sit in the refrigerator 12 hours before reheating and serving.

I drain jack fruit, let it sit in clear water overnight in fridge. mash with fingers. rub well w/ garlic, chopped onion, your seasonings. BBQ, or: salsa & Dijon, tomato paste, 1/4 cup white wine, or balsamic vinegar, etc. Tweak like Chili. In slow cooker 2 hrs. Turns dark. EAT!Tortillas? - 6/20/11
