Vegan Coconut Orange Muffins

Ingredients
Dry Mix:1 cup white flour1/2 cup wheat germ1/2 cup wheat bran1 tsp. baking soda1/2 tsp baking powder1/4 tsp salt3/4 cup unsweetened shredded coconutWet Mix:1/2 cup orange juice1/4 cup soy milk1 med. orange (peel and all) cut up1/3 cup applesauce1/2 cup packed brown sugar2 Tbsp. oil2 Tbsp ground flax seed
Directions
Preheat oven to 400 degrees F.
Grease muffin tin.

Mix dry ingredients together in a large bowl, set aside.

Mix wet ingredients together in a blender.

Pour the wet mix into the dry mix and stir just until combined (don't over stir).

Spoon evenly into 12 muffin cups.

Bake 15 minutes.
