Hearty Minestrone

0.5 lb. bulk Italian Sausage (hot or mild, to taste)1 medium onion, chopped3 cloves garlic, minced4 cups reduced sodium chicken broth1 15 oz can petite diced tomatoes1 package frozen chopped spinach1 cup diced celery5.5 cup sliced carrots2 cup frozen cut green beans1.5 t dried basil.5 t dried marjorampinch hot pepper flakes (to taste)1 can pinto beans3/4 cup small shell pasta (optional - I don't use this and so it's not in the calorie calculation)
Brown sausage and drain well.
In a slow cooker or large pot, combine chicken broth, onion, and garlic. Add sausage when it's ready. Add frozen spinach, celery, tomatoes, spices. Simmer for 3 or 4 hours to blend flavors well. An hour before serving, add chopped carrots and frozen beans. 10 or 15 minutes before serving, add pinto beans. (And pasta, if you're using it.)
This makes about 12 one-cup servings.
