African Autumn Soup

Ingredients
2 yams, peeled and cubed1 butternut squash, peeled, seeded and cubed3 medium carrots, peeled and chopped1 onion, diced2 stalks celery, diced1/4 cup minced ginger6 cloves garlic, minced1- 15 oz plum tomatoes2T Coriander2T Smoked Paprika (can sub regular paprika)1t cumin1/4t cayenne1/2t celery seed2 bay leaves1/2t onion powder6cups vegetable broth4cups water
Directions
Sautee onions, carrots, celery, garlic and ginger until soft

Add spices, and cubed squash and yams

Sautee for 2 minutes.

Add tomatoes (and juice) broth and water, bring soup to a boil, then reduce heat and simmer 30 minutes- till yams are soft and will mash with a spoon.

Puree soup and serve

Makes 10 starter servings or 6 meal-sized.

This soup is AWESOME with a big chunk of hearty bread.
