30-Minute Minestrone

Ingredients
* 1 cup carrots, chopped * 4 celery rib, thinly sliced * 1 medium onion, chopped * 1 tsp garlic, minced * 4 teaspoons vegetable oil * 6 cups water * 2 cans (14-1/2 ounces) Italian stewed or diced tomatoes, undrained * 6 beef bouillon cubes * 1 cup torn fresh spinach * 1 can red kidney beans, drained and rinsed * 2 cups cooked elbow macaroni * 1/2 teaspoon pepper
Directions
In a saucepan, saute carrots, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes and bouillon; bring to a boil. Reduce heat and add beans. Simmer, uncovered, for 20-25 minutes or until vegetables are tender. Stir in spinach, macaroni and pepper; heat through.
