Ingredients
2 28oz. cansdiced tomatoes 1 cup fresh spinach2 small zucchini1 yellow squash2 med onions2 cups fresh mushrooms1 cup chopped fresh broccoli1/2 cup parmesan cheese4 cloves garlic3 TBsp. olive oil
Directions
Sautee all veggies and garlic in olive oil, when cooked add diced tomatoes. Cook scallops and shrimp in a different pan, drain and add to other ingredients. Season to taste. Serve over wheat pasta or rice.
