Fancy Cream of Carrot Soup

Ingredients
6.5 cups of Water1 tbsp Bay leaves/2 whole leaves10 Medium Carrots raw and sliced4 Medium Onions, sliced2 Medium Potatoes, sliced2 tsp Granulated White/Brown Sugar50g Sour Cream Fat FreeDash SaltDash Black Pepper freshly ground1 tbsp Freshly ground Nutmeg
Directions
Makes 8 1-cup servings.

Bring water to the boil. Add bay leaves and all the vegetables. Simmer for 45 minutes.

Remove the bay leaves, then purée all the vegetables with the water in a blender. Add the sugar and sour cream and heat over low flame until piping hot. Season to taste.

Add the nutmeg as a garnish.
