Spelt Waffles

3 cups Whole Grain Spelt Flour1 Tbs. Baking Powder1 tsp. Sea Salt1/4 cup Granulated Fructose (or Sugar)1/4 cup Oil or Melted Butter3 Medium Eggs2 cups 2% Milk1 Tbs. Vanilla Extract
Preheat waffle iron.
Mix dry ingredients together in a medium bowl.
Mix eggs, oil, milk and extract in a separate bowl. Add liquids to dry ingredients and mix until moist but do not over mix.
Spray iron lightly with spray oil.
Pour 1/2 cup into waffle iron and cook to desired doneness.
Makes 10-12 waffles

These were great -- and my kids ate whole grain without even noticing! Spelt is less bitter than whole wheat flour and has a smoother, less grainy appearance. If eating them plain I would add an extra tablespoon of sugar to add a bit more sweetness, but my kids soak them in syrup or whipped cream. - 9/18/13
