Ingredients
1 medium sweet potato, chopped1/2 medium onion, chopped1 cup broccoli, chopped1 cup cauliflower, chopped1 large carrot, chopped1.5 cups brussel sprouts, halved
Directions
Place chopped veggies in casserole dish, with .5 inch of water in the bottom covered with alumium foil, in the oven at 350 degrees. Remove foil after 20 minutes and let it continue to cook for 10-20 minutes afterwards. Enjoy!
