Chicken Pancit

4 Chicken Breast (skin removed)1 package Canton Noodles1 cup Sliced Carrots 1 cup Sliced Celery1 cup chopped Onions1/2 medium size Cabbage3 cloves of Garlic3 tbsp Extra Virgin Olive OilPepper and Salt to taste
Boil the skinless chicken breast in water. When the chicken is cooked, place it aside to cool. Keep the water that the chicken has been cooking in. While waiting for the chicken to cool, chop your onions and garlic. Slice thinly your carrots and cabbage.
Shred chicken when it has cooled. In a large pan, add olive oil over medium heat. When oil is hot add garlic and onions, cook for 2 minutes. Add the carrots, celery and cabbage. When everything has cooked, add your canton noodles. Ladle in the water that the chicken has been cooking in. Stir to incorporate the veggies with the noodles. Add pepper and salt. Stir Constantly! Add one ladle of water at a time, until the noodles become soft.

I didn't think my family would like this meal because the kids are not into celery or cabbage, BUT they LOVED it! I was very good. The whole house smells great! I didn't give it a 5 because it was missing a little something. A tiny bit bland, but the kids added soy and hubby hot sauce. Worth a try! - 7/30/11

Made this last night and it was FABULOUS! I am not a cook by any stretch of the imagination but this was easy and quick. Usually when I cook something my husband will say: it's good, but you could... add X, or do Y... and it would be better. He said this was GREAT and he wouldn't change a thing! - 1/25/09
