Hearty Chicken Veggie Soup

1 TBS extra virgin olive oil1/2 c. chopped onion2 garlic cloves, chopped1 boneless, skinless chicken breast, cubed1 lg russet potato, diced1 c. frozen peas & carrots1/2 c. frozen corn kernals1/2 c. quinoa (optional)3 c. chicken broth (99% FF)1/2 c. tomato saucepepper to taste
Heat olive oil on medium high heat in a large pot.
Add onions and garlic and stir until golden brown.
Add cubed chicken breast and diced potatoes, cook for 5-7 minutes.
Add remaining ingredients and bring to a rolling boil.
Turn heat to medium and continue to simmer for 20 - 30 minutes.
Allow to cool before eating.
Makes 4 servings.
