Apple cake with cream cheese icing

FOR CAKE2 cups sugar1 cup oil3 large eggs2 cups flour1 tsp. baking soda1 tsp. salt2 tsp. cinnamon2 tsp. vanilla4 cups diced apples, cored but not peeled1 cup diced walnutsFOR ICING1 package (8 oz.) cream cheese3 tbsp. margarine1 tsp. vanilla1½ cup powdered sugarpinch of salt
FOR CAKE
1. Preheat oven to 350˚F.
2. Mix sugar, oil, and eggs in a large bowl.
3. Combine flour, soda, salt, and cinnamon and add to sugar mixture. Add vanilla and mix thoroughly.
4. Mix together apples and nuts and add to batter. Stir in by hand; batter is too heavy for most mixers.
5. Bake 50-60 minutes in lightly greased 9” x 13” pan.
6. Cool completely before frosting.
FOR ICING
In a small bowl, beat all ingredients at high speed, scraping dow sides, until smooth. Frost cooled cake. Refrigerate.
