Egg Muffins

Ingredients
2 c. Egg beaters1/4c. fat free half and half4 oz cream cheesesalt and pepper1/3 c. chopped green onions6oz chopped canadian bacon1 c. lowfat cheddar cheese, divided
Directions
combine Egg beaters, half and half, cream cheese, and s&p in a small bowl.

saute green onions and canadian bacon in a pan til heated through. sprinkle meat mixture in the bottom of 12 muffin cups sprayed with PAM. Top meat mixture with 1/2c. shredded cheese. Top mixture with Egg mixture. Top with remaining cheese.

Bake at 375 for 30 minutes.

2-muffins per serving.
