A.R. Elk Chili

3 lb ground elk meat 2 cups chopped onion 1 cup chopped green pepper 1 cup chopped celery 2 qts canned pinto beans 1 qt canned tomatoes 2 cups tomato sauce 2 cups salsa 2 T beef broth base 2 to 3 cups water, just as needed according to preferance 1/4 cup chili powder 2 T Worcestershire sauce 1 tsp basil 2 tsp ground cumin 2 tsp steak sauce 2 tsp garlic powder 1 tsp salt 1 tsp black pepper
In a large kettle, cook the beef, onion, green pepper, celery, and garlic over medium heat until meat is no longer pink and the vegetables are tender. Stir in the beans, canned tomatoes, salsa, tomato sauce, beef base, seasonings, and desired amount of water. I added about 3 cups. Bring to a boil, reduce heat and simmer uncovered for 30 minutes or until chili reaches desired thickness. Yield 23 cup servings.
