Wheatberry Casserole

2 cans tomato cause and 1 can of water1 cup (or 7.4 oz) of wheat berries1 medium onion chopped1 lb lean ground beef (94%)2 cloves of garlic minced1/2 cup chopped green pepper1 can drained corn (no sugar added)1/2 tsp oregano1/2 tsp sal (optional)1 cup grated FF cheese (can use a mixture of cheddar and ff mozzarella)
Bring tomato sauce and water to boil. Add wheat berries and simmer, covered on stove until tender--1 hour.
While cooking, brown ground beef. Add onions, garlic and green pepper and continued cooking until vegetables are tender.
Combine all ingredients except cheese in a casserole dish (sprayed with PAM). Bake at 350 degrees for 10 minutes then top with FF cheese and bake for another 5 minutes or until cheese is bubbly. Let sit for 5 min before cutting.
