Tofu "Burgers"

Ingredients
1 lb firm Tofu, mashed2 Tbs garlic powder2 Tbs onion powder1 Tbs garlic herb seasoning3 eggs, beaten2 Tbs mustard2 Tbs ketchup1 cup gluten free pancake mix
Directions
Heat approximately 1/4 oil in skillet. Drop rounded 1/4 cup of burger mix - up to 4 - into hot oil. Fry until crispy brown on both sides. Place on cookie sheet covered with paper towels to drain excess oil. Goes well with any main dish. Excellent when topped with Catalina or Russian dressing. If need to reheat, best when refried.
