Curried Cauliflower Soup

Ingredients
1 cup chopped onion1 tbsp olive oil4 cups chicken broth1.5 pounds caulifower1 large carrot1 cup low fat milk1/4 tsp nutmeg1 tsp curry powdercayenne to taste
Directions
Makes 4 servings

1. In medium saucepan, saute onion in oil for 3 minutes. Add curry at this time.
2. Add broth, cauliflower, carrot. Bring to boil then turn down to simmer for 15-20 minutes till veggies soft. Remove form heat and cool till warm
3. Transfer to blender or processor then add milk and puree until smooth.
4. Can be served warm or cool

    Good, and QUICK. Can be made with a pound of frozen cauliflower. I used an immersion blender, much easier plus you don't need to cool the soup before pureeing it. - 1/24/15
