500g (1lb)bonless,skinless chicken2.5cm(1inch)piece fresh ginger,peeled and sliced.2 small garlic cloves, peeled and sliced.2 teaspoons cornflower.1 tablespoon soy sauce.1 tablespoon dry sherry.150ml (1/4 pint)chicken stock.1tablespoon sunflower oil50g (2oz) unsalted cashew nuts.to garnish2 spring onions, chopped.
trim the chicken of all fat and cut in to even size pieces. put the pieces ina bowlwith the ginger and garlic; cover the bowlandleave to stand. mix the cornflower with soy sauce,sherry and stock. set aside. heat oil in wok or large frying pan add the cashew nuts and stir fry them until lightly brown.remove them with slotted spoon add the chicken and ginger/garlic, stir fry until cooked and tender,this will take 4/5 mins.add the liquidingredientsand stir until they have blended and the liquid has thickened. taste the sauce and season if necessary, pileeverything in a warm serving dish and sprinkle spring onions and cashews over the top and serve
