2 medium onions finely chopped2 cloves garlic, crushed1 tbsp olive oil3 cups green lentils6 cups water1 tsp salt1 tsp black pepper1 tsp cumin1 cup long grain rice2 cups chopped parsley
saute the onion and garlic over med-high heat until translucent.
add the lentils, salt, pepper, cumin and water and simmer for one hour
add rice, parsley and if neccessary, 2-3 cups more of water
