Mississippi Mud Cake

Ingredients
1 cup sifted whole wheat flour1/2 sugar1/2 cup splenda1 3/4 tbsp cocoa powder1/4 cup canola oil1/4 cup water1/4 cup fat free buttermilk1/2 tsp baking soda1/2 tsp vanilla1/2 stick light margarine1 egg or 1/4 cup egg beatersFROSTING1/2 box powdered sugar1/2 fat free half and half1/2 stick light margarine1 3/4 tbsp cocoa powder
Directions
Pre-heat the oven to 400. In large bowl mix flour, sugar and splenda and set asside. In a sauce pan heat oil, water, cocoa and margarine to a boil. Remove from heat and add to sugar mixture. Mix well by hand. add buttermilk, baking soda, egg and vanilla. Lightly coat a 8X8 inch square pan with cooking spray and pour in cake batter. Bake for 20 minutes. 5 minutes before cake is done. Bring remaining cocoa, margarine, half and half and cocoa to a boil. Remove from heat and add powdered sugar. Pour over cake hot out of the oven. I usually put several holes in my cake with a chopstick and pour the frosting over it so it will seep in. Best if eaten while still warm. This makes 9 servings.
