Eggless Banana Muffins

Ingredients
4 bananas mashed1 tsp vanilla6 tsp celeb margarine1 tbsp canola oil0.5 cup of sugar0.25 cup of brown sugar 1 tsp baking soda1 tsp baking powder1 dash of salt2 tbsp cinnamon0.25 tsp nutmeg1.5 cups of flour0.25 cup of walnuts0.25 cup of pecans
Directions
1. Preheat oven to 375F.
2. Using low calorie cooking spray to grease muffin tins or use muffin cup liners.
3. In one bowl combine bananas, vanilla, margarine, oil, sugar and brown sugar. Mix well.
4. In another bowl combine baking soda, baking powder, salt, cinnamon, nutmeg and flour. Mix well.
5. Pour wet ingredients into bowl with dry ingredients. Mix well.
6. Add in walnuts and pecans. Mix.
7. Spoon muffin batter into muffin tin. Makes 12 muffins.
8. Bake for 20-25 minutes.
9. Cool and enjoy!

    I didn't have any nuts other than pistachios, so I crushed them up and added them to the batter and it turned out great. :-) - 11/20/11
