Turkey Taquitas

Ingredients
1lb Ground Turkey Meat1 package of Fajita Seasoning2 Lg potatoes (pealed and chopped)1 can mushrooms3 Lg Eggs8 burrito size Tortilla shellsTaco Mix flavored Cheddar Cheese (chipolte is good too)
Directions
Using a deep skillet; Brown the ground turkey, mix in Fajita seasoning with 1/4 cup of water.

Add chopped potatoes to the turkey & fajita mix. Let it cook until the potatoes start to soften, then add the mushrooms.

While this is cooking beat eggs until fluffly.

Move the contents of the pan to the outside and add eggs.

Do not cook the eggs completely but remove from heat when eggs appear shiney.

Preheat oven to 425 degrees

place mixture into Tortialla shells, add cheese, wrap and add place into a baking pan.

Cover with aluminum foil

Bake at 425 for 20 minutes.
