Baked(fried) eggplant

Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Hellmann's Mayonnaise with extra virgin olive oil, 2 tbsp Panko Japanese Style Bread Crumbs-Harris Teeter, 1 cup Garlic, .5 tsp Oregano, ground, .12 tsp Basil, .1 tbsp
Directions
peel eggplant and slice about 1/2 to 1 inch thick slices
mix panko bread crumbs, garlic powder, oregano and basil on a plate
spread light coating of mayo on eggplant and press into bread crumbs
place eggplant slices on a pizza pan taking care to keep them from touching
Bake in 350 degree preheated oven for 20 minutes
If you have the type of pizza pan that I have (the type with holes) you can just bake for 40 minutes total and it's done, if not, after the first 20 minutes, turn your slices over and bake another 20 minutes
I used some left over crushed tomatoes to make a little sauce for these. Added garlic, oregano, basil and a little sugar to cut the acid and sprinkled a little parmesan in the sauce.
I have also done them with completely different spices (curry, garam masala and cinnamon) and they were great that way too.
