Beef n Veggie Stew

Ingredients
1 cup chopped carrots1 bell pepper (I actually used about 1/3 each of 3 different colored peppers)1 small to medium size onion2 medium potatos16 oz beef stew meat ( I used a chunk of roast that I hadn't cooked yet)2 Tbs Olive oil5 cups water2 beef bullion cubes
Directions
Chop all veggies to about 1 inch chunks and set aside.
Chop meat into pieces of about 1-1.5 inches.
Brown meat in olive oil and then add in all of the veggies, water, and bullion. Cover and let simmer for about 45 min. Should make 5 or 6 servings of about 2 cups.
