AJ-Stuffed Peppers

Ingredients
1) 3 peppers (red, green or yellow!)2) 1 big red onion3) 1 teaspoon dried crused mint4) Half teaspoon ground cumin5) 2 tablespoons lemon juice6) 1 1/12 chopped tomatoes7) 30g raw rice8) 50 grams lean minced pork9) Salt and black pepper to taste
Directions
1) Cut the heads off the peppers and leave aside, you will need them as lids later.
2) In a mixing bowl, mix all other ingredients including the raw rice and pork.
3)stuff the peppers, place lids on
4) heat oven to 180 degrees then place the peppers in an oven proof dish with lid thats been filled mid way with water
5) Bake for 45 minutes to an hour
6) Enjoy!
