Ingredients
1 large beaten egghalf Tablespoon olive oil1/8 cup rinsed black beans1 oz shredded mozzerella1/4 cup salsacilantro for garnish(optional)
Directions
beat one egg in a bowl
heat oil in small fry pan
pour egg into oil, let cook on one side then flip to the other side
put beans and cheese on egg
fold egg over when fully cooked top with a little more salsa and cilantro if desired
makes 1 small omelette
