Homemade protein bars

Ingredients

1 cup soy protein powder1/2 cup oat bran1/2 cup all natural hard red whole wheat flour1/4 cup wheat germ1/2 tsp Kosher salt2 cups total mixed dried fruit (blueberries, cherries, figs, etc.)1 box (12.3 oz) soft silken tofu1/2 cup unfiltered apple juice1/2 cup packed dark brown sugar2 large eggs2/3 cup natural peanut butter
Preheat oven to 350 degrees.
In a food processor, finely chop the mixed fruit.
In a large mixing bowl, combine protein powder, oat bran, flour, wheat germ, and salt.
In another bowl whisk the tofu until smooth. Whisk in the apple juice, brown sugar, eggs, and peanut butter one at a time, whisking until each is well combined before adding the next.
Add the tofu mixture to the dry ingredients and stir well to combine. (By the way, this makes a GREAT arm workout)
Stir in the chopped dried fruit and mix well.
Pour into a 13x9 baking pan that has been lined with oiled parchment paper.
Bake at 350 deg. for 35 minutes.
Let cool completely before cutting into 20-24 squares.
