Ingredients
1 pkg jello vanilla pudding mix, fat free, sugar free1/2 cup 1% milk 1 5 oz can pumpkin1 tsp pumpkin pie seasoning1/2 cup westsoy low fat plain soy milk8 Trader Joe's triple ginger snaps1 tbsp walnuts, choppedwhipped topping, 2 tbsp
Directions
Mix pudding and milk until dissolved, cook over low heat until bubbly and thick, stirring often. Remove from heat and fold in pumpkin and pumpkin pie seasoning.
In each of 4 parfait glasses, place one ginger snap on the bottom. Spoon pumpkin mix over the cookie. Crush the other four cookies with walnuts and sprinkle over the top. Refrigerate. Put 1/2 tbsp whipped topping on each and serve.
