Baked Wilted Spinach Omlette

Ingredients
Egg, fresh, 3 largeSpinach, fresh, 40 grams, roughly choppedPeppers, red, 1 tbsp Yellow Peppers 1 tbspShallots, 1 tbsp chopped fry light 1 cal olive spray, 5 serving Parmesan Cheese, freshly grated, 1 dessert spoon1/2 cup water5 sprays 1 cal oil
Directions
1. Heat pan and spray with oil
2. Add peppers and shallots and fry on low heat for 2 minutes, then add spinach until just wilted
3. Beat eggs with 1/2 cup of water and add fried ingrediants
4. Place in an oven proof dish and put in oven on a medium heat for 30 mins.

Serve with fresh Arugula, choped tomatos and shallot rings
