Lovin lemon layer cake

Ingredients

Cake1/2 cup unsalted butter1/2 cup granulated sugar1/2 cup cane sugar3/4 tsp vanilla extract3/4 tsp lemon extract2 large eggs2 cups cake flour1 tsp baking powder3/4 tsp soda1/4 tsp salt1 cup buttermilkFilling1/2 cup granulated sugar2 Tbs cornstarch1/2 cup cold water1/4 tsp orange extract3/4 tsp lemon extract1 beaten egg yolk3 Tbs lemon juice1 Tbs salted butter
Cake Prep
cream butter and sugars
add extracts
add eggs one at a time beating well after each
add dry ingrediants
mix slighly
add buttermilk slowly while mixing
mix until smooth
grease and flour 2 round 9 in pans or spray with cooking spray for baking
Bake
Pour batter into preped pans
Bake for 30 minutes at 350
Switch positions of cakes after 15 minutes to ensure even baking
Filling (easily prepared while cakes bake)
mix granulated sugar and cornstarch
blend in cold water and extracts
stir over low heat until mixture is clear and thick
add beaten egg yolk and lemon juice
slowly stir in butter
cook while stiring for about 2 minutes
cool completely
Assembly
After cakes are cool cut off rrounded portions to create flat topped cakes
Top one cake with filling
put second cake on top of covered cake cut side down
Place any remaining filling onto the cut pieces of cake.
Frost with your favorite icing if desired
cut cake into 16 pieces for nutritional information to be accurate for 1 serving.
