Easy Hamburger Barley Soup

1 1/2 pounds ground beef, extra lean1 medium onion, chopped1 can (28 oz.) diced tomatoes, undrained2 cans (14oz) beef broth, fat free1 cup water4 celery ribs, thinly sliced10 whole peppercorns1 teaspoon dried thyme1/2 teaspoon salt1/2 cup quick-cooking barley1/4 cup minced fresh parsley
Brown beef and onions. Stir in tomatoes, broth and water. Add celery and carrots.
Place peppercorns in a double thickness of cheesecloth; bring up corners of clotha nd tie with kitchen string to form a bag. Add to beef mixture. Stir in thyme and salt. Bring to boil. Reduce heat; cover and simmer 45 minutes or until vegetables are tender.
Return to boil. Stir in barley. Reduce heat; cover and simmer 10-12 minutes or until barley is tender. Remove from heat; stir in parsley. Let stand 5 minutes. Discard spice bag.
Makes 8 - 1 1/3 cup servings.
