1/2 cup of tapioca pearls2 cups non fat milk1/2 cup splenda2 tsp vanilla... can vary1/2 cup egg beaters
bring milk and tapioca to a boil.. stiring alot. after boiling turn to lowest heat possible and simmer for 5 mins. add some of the warm milk mix to the egg beaters and stir to equalize the temp... stir in egg milk mix to the rest of the milk mix... stir and bring to a boil and turn to lowest heat and simmer for 3 mins more or so till think like pudding. cool for 15 mins then add vanilla and either serve or put in fridge for later.. makes about 4 servings... i added a little whipped cream at end and mixed it in to lighten the texture..
