Buffalo-style Chicken Sandwich

2 large boneless skinless chicken breast halves (about 1 pound)1 egg white, lightly beaten1/4 c. plain breadcrumbs1/3 c. Anchor Bar Buffalo Sauce (or other fat free buffalo sauce)4 kaiser rolls, split2 c. spinach leaves4 T. fat free Blue Cheese dressing
Place medium to large oven-safe skillet (i.e. cast iron) in oven. Preheat broiler and skillet while you prepare chicken.
Cut chicken breasts in half (so you have 4 equally sized pieces). Coat each piece of chicken in egg, then bread crumbs, then roll in buffalo sauce. Using a potholder, remove skillet from oven and place chicken in it. Return skillet to oven and broil 4 to 8 minutes or till chicken tests done. (You should not have to turn chicken since pan was pre-heated).
While chicken cooks, toast buns. Spread 1 Tbsp. dressing on each bun, add 1/2 c. spinach leaves. Top with cooked chicken and more buffalo sauce if desired.
