Baked Coconut Chicken Kiev

2 Chicken Breasts, skin and bone removed125gm Brie Cheese, cut into 4 slicesOne cup of fresh breadcrumbs, seasoned1/4 Cup of dessicated coconut1/4 Cup of plain white flour to dust the chicken with.200ml (6floz) of creamone teaspoon of olive oil
Heat the oven to 175 degrees celcius. Carefully slice into each breast to form a pocket, place 2 slices of cheese into each pocket. Try to make sure the cheese is firmly inplace. Carefully dust each breast with the flour and brown on a very lightly oiled griddle or pan. Mix the bread crum -bs and coconut together with the olive oil and place half in the bottom of a baking dish, place the chicken on top and then sprinkle the remaining crumb mixture over top. Pour the cream into the dish and bake for 30 to 40 minutes - until cooked, the topping will be nicely browned and juices from the chicken and cream will be caramelising around the edges of the dish.
