Erhard's Cabbage Soup

Ingredients
Beef, cut into small cubesCampbell's Low sodium tomato juiceWaterCabbageCarrotsPotatoesSummer SavoryParsleySalt and Pepper
Directions
Season beef with salt and pepper. Brown beef in large pot until most of the juice has cooked off. Add 1/2 can of tomato juice and the chopped up cabbage. Let simmer for about 2 hours on medium low heat.

Then, add the carrots and potatoes. Adjust salt and pepper as you go along to your personal taste. After about 30 minutes add the herbs and continuing simmering another 30 minutes.

Recipe makes a lot but we freeze the leftovers for lunches in individual containers. Goes a LONG WAY and it's a cheap and hearty Fall meal.
